This mildly vibrant leaf has been associated with a calming sensation throughout much of history. It has been used by different cultures to protect and restore a sense of well-being. The belief that parsley provoked lust and promoted fertility made it all the more popluar to cook with throughout the centuries. It was also believed that carring a sprig in your shoe would make you more attractive to the opposite sex.
Because parsley seeds have fairly low germination rates, folkloric tales were created to explain why. These stories suggest the slow and unreliable germination of parsley is because the seed goes nine times to the Devil and back before coming up. The ungerminated seeds are the ones the Devil keeps for himself. In contrast, wreaths of parsley were given at Roman weddings to protect against evil spirits. Perhaps, any parsley that had actually grown was considered unacceptable to the devil and was therefore not attractive to evil spirits?
In some areas, the belief claimed parsley would only grow if the woman was master of the household.
Tales of parsley go back to Ancient Greece. It was sacred to the Diety Persephone, Queen of the Underworld.
According to one Greek legend, parsley sprang from the blood shed by the fallen hero Archemorus when he was eaten by serpents. The ancient Greeks held the plant sacred, and parsley was never placed on their tables.
These dark connections to death and the underworld make parsley a common component in many rituals and ceremonies.
In various cultures, i
t is believed that bathing in hot water with parsley and sage permits one to connect and communicate with the dead. Just like anything else associated with death it then is also connected with rebirth and new life. As such these baths can also
be used to to purify and end misfortune.

Origin and History:
Parsley has been cultivated and developed over so many centuries that its precise origins are difficult to pinpoint, however it
is thought to be
native to the Mediterranean region of Southern Europe and has been cultivated for more than 2,000 years. Some historians credit Charles the Great, the Holy Roman Emperor, for making this herb so popular because he had it grown all over his property.
The botanical name Petroselinum comes from the Greek word for stone, which is petro, given to parsley because it was found growing on rocky hillsides in Greece.
Although the Ancient Greeks did not use parsley in cooking, it was revered as a symbol of oblivion and death and as a funeral herb.
The Romans are said to have used it at parties to cover up the smell of alcohol on the breath, while also aiding digestion. And there’s the unflattering remark that was once made about those who looked as if at death’s door: “The man’s in need of parsley”.
Parsley is mentioned often throughout history, and not only for its culinary and medicinal properties. The early Greeks made crowns of parsley to bestow upon the winners of the Nemena and Isthmian sports games, in the same manner that bay wreaths honored the Olympians. Parsley is used in the Hebrew celebration of Passover as a symbol of spring and rebirth.
It is mentioned as one of the plants in the gardens of Charlemagne and Catherine de Medici. Rumor has it that Medici is responsible for popularizing parsley when she brought it back to France from its native Italy.
In medieval times parsley was surrounded by much superstition, some
farmers would refuse to transplant parsley and some were too afraid to grow it at all.
Much of the folklore surrounding parsley can be attributed to a look-alike plant called fool’s parsley that is actually deadly. So maybe don't go faraging for wild parsley unless you are familiar with the plant, but the real thing is very healthy.
Homer tells of chariot horses being fed parsley by warriors prior to battle in hopes of making the animals more fleet of foot. Victors at funeral games, athletic contests held in honor of a recently deceased person, were crowned with parsley.
Greek gardens often had borders of parsley and rue which led to the saying “Oh! we are only at the Parsley and Rue” to signify when an undertaking was in contemplation and not fully acted upon. The Romans did not generally eat parsley either but they did wear garlands of parsley on their heads during feasts to ward off intoxication.
How to Use:
Parsley can be added to a hot bath or burned. It is most commonly used in savory cooking. It's mild flavor make it quite easy to add to a variety of dishes.
